The Cipolla estate represents the desire to experience and share a passion, to make wines that bear the distinctive mark of their terroir and grape variety, and to introduce people to vineyards of outstanding potential.
Romain Cipolla is an oenologist and winemaker, but above all, he is a passionate young man who enjoys accepting challenges. After studying at the Haute école d’Oenologie de Changins, as well as with Claudy Clavien in Miège and Philippe Constantin in Salgesch, he embarked on a project to create his own winemaking estate in Upper Valais.
With the help of his friends and family, he cultivates roughly two hectares of vines distributed across the vineyards of St German, Raron and Visperterminen.
On the estate, the vines are cultivated in harmony with the seasons and the environment: work is done exclusively by hand, and mechanical weeding, work on the soil and maintenance of grass cover are favoured over chemical weeding.
Work in the cellar is governed by two key concepts: the quality of the grapes and a respect for the properties of each grape variety. The wines are matured to bring out delicate aromas and a balance of flavours, in the aim of producing authentic wines with a strong personality.
