Established in 1994, the Cave du Paradou cultivates a five-hectare estate, mainly situated at the entrance to Val d’Hérens in the municipality of Mont-Noble. A few plots in the Rhône Valley help to round out its assortment, hosting grape varieties such as Cornalin, Petite Arvine, Marsanne, Humagne Rouge and Syrah. Twenty-nine different grape varieties are vinified, offering a broad palette of wines that ranges from dry and aromatic white wines to dessert wines, right through to red wines – some of which are matured in Bordeaux oak casks.
Great wines begin at the vine, which is why particular care is taken to produce grapes of the highest quality:
– Adaptation of different grape varieties to the terroirs that suit them best.
– Strict control over yield – an indispensable part of creating concentrated wines with typical varietal features.
– Cultivation methods that respect the environment: vines are worked according to the principles of integrated production (Vitival group).
